If you love whole roasted cauliflower, then you have to try our brown sugar BBQ version, which is perfect for when you’re craving

summer BBQ flavors without the meat. Sure, you can get cauliflower any time of the year at the grocery store, but peak season runs through the summer into October. During this time, you can get extra tasty (and beautiful) heads of cauliflower at the farmers’ market, right around the same time that we’re craving all things BBQ.

The best part about roasted cauliflower is the caramelized golden bits. Adding a cup of water into the skillet halfway through cooking helps the cauliflower steam a bit in the center and skips a common step in roasted cauliflower recipes where you have to boil or steam the cauliflower before putting it in the oven. Skipping the boiling and steaming means that it won’t retain as much moisture and it can crisp up in the oven, which translates into extra crispiness on the outside.
